I'm not sure a recent publication date is entirely necessary for your topic, unless that is a requirement of the assignment. If it is, I was able to find only three full-text articles in our databases about the Catahoula Leopard dog published after 2008. You can review them here on this Results page.
Encyclopedias are actually very good sources for the general kind of information you are looking for. This one, The New Encyclopedia of the Dog is available at the Fremont library in the reference section.
This ebook also has a section on the Catahoula Leopard: The Howell Book of Dogs
If you want to take a broader view, introducing the differences in behavior between breeds, this book, edited by Temple Grandin, might be useful.
If this isn't sufficient, public libraries may have a wider variety of books on pets in general, and dog breeds in particular.
